VOCs and activated carbon
In one line: VOCs are gases given off by paints, cleaning products, furnishings and cooking. A particle filter (HEPA or MERV-13) can't capture gases — for smells, fumes and chemicals you need activated carbon, which adsorbs them onto its vast internal surface.
What VOCs are
VOC stands for volatile organic compound — carbon-based chemicals that evaporate into the air at room temperature. Common indoor sources include fresh paint, new furniture and flooring, air fresheners, cleaning sprays, candles and cooking. Some cause the "new" smell of a room; others are odourless. Because they're gases, not particles, they behave completely differently from PM2.5.
Why particle filters can't remove them
A HEPA or MERV-13 filter works like an extremely fine sieve for solid and liquid particles. VOC molecules are far smaller than any particle and pass straight through. This is the single most common misunderstanding in air purification: a "HEPA air purifier" removes dust, pollen and smoke particles, but does little for gases or lingering smells on its own.
How activated carbon works
Activated carbon is carbon processed to have an enormous internal surface area — a few grams can have the surface area of a tennis court. Gas molecules stick to that surface (a process called adsorption) as air passes through, removing odours, cooking smells, VOCs and some fumes. More carbon, and more contact time, means better and longer-lasting gas removal — a thin carbon-coated mesh does far less than a deep carbon bed.

When you need carbon
If your main concern is dust, pollen, pet allergies or smoke particles, a good particle filter is enough. Add activated carbon if you're tackling cooking smells, pet odours, smoke odour, VOCs from paint or new furniture, or fumes near a busy road. Many units offer a combined particle + carbon filter; for heavy odour needs, look for a substantial carbon amount rather than a token coating.
